My son loves oatmeal and bananas so I’m sure he would love this recipe of Bananas Oat Flapjacks. It’s so easy to make and gives a new twist on his favorite oatmeal breakfast. Why don’t you try this too? I’m sure your little one would love it!
Ingredients:
2 large ripe bananas, peeled and sliced
1 tablespoon granulated sugar
1 cup all-purpose flour
1/2 cup Quaker oats
1 teaspoon ground cinnamon
1/4 teaspoon salt (optional)
1 cup fat free milk
1 egg, lightly beaten
2 tablespoons vegetable oil
maple syrup, warmed
banana slices (optional)
coarsely chopped walnuts or pecans (optional)
How to prepare:
1. In a medium bowl, mix the banana slices together with the sugar. Make sure all the slices are coated.
2. In a big bowl, mix the flour, oats, baking powder, cinnamon, and salt. Stir well.
3. In a third bowl, mix the milk, egg, and oil together. Blend it well.
4. Add this mixture to the dry ingredients all at once until everything is properly moistened. Do not overmix!
5. Now heat your griddle to medium-high heat and lightly grease it. For each flapjack, pour 1/4 cup batter on the hot griddle.
6. Now top with four or five banana slices. Flip them over when the tops are bubbling and the edges look cooked. Serve with warm syrup.
7. Add more bananas and nuts if you like.
